Smoked Pineapple Ginger Beer Mocktail

Smoked Pineapple Ginger Beer Mocktail
Makes 2

Cinnamon Simple Syrup

  • ½ cup sugar
  • ½ cup water
  • 2 large cinnamon sticks

For the Mocktail

  • 2 tbsp loosely packed mint leaves
  • ½ tsp finely chopped fresh ginger
  • 6 tbsp lime juice
  • ¾ oz cinnamon simple syrup
  • 1½ oz pineapple juice
  • 3½ oz ginger beer
  • Pig & Nut Premium Wood Chips

Optional Garnish

  • Lime wedge
  • Pineapple leaf
  • Luxardo maraschino cherry

Directions

Cinnamon Simple Syrup

  1. Combine the sugar, water, and cinnamon sticks in a small saucepan.
  2. Cook over medium-high heat, stirring occasionally, until the sugar dissolves, about 5 minutes.
  3. Remove from heat and let the cinnamon sticks steep for 30 minutes, then discard them. (The syrup keeps in the fridge.)

Mocktail

  1. In a cocktail shaker, muddle the ginger, mint, and lime juice.
  2. Add the pineapple juice and cinnamon simple syrup.
  3. Shake with ice until cold, about 30 seconds.
  4. Double-strain into two ice-filled glasses (pour through the shaker strainer, then a fine-mesh strainer). Add more ice if needed.
  5. Top with the ginger beer and stir to combine.
  6. Optional: garnish with a lime wedge, pineapple leaf, and a Luxardo maraschino cherry.
  7. Smoke the cocktail with your choice of Pig & Nut Premium Wood Chips using a wood topper or smoke chamber. Experiment with the different varieties to find your favorite flavor.
  8. Serve immediately and enjoy!
