Smoked Peach Bourbon

Smoked Peach Maple Bourbon

Ingredients

  • 1 peach
  • 2 oz bourbon whiskey
  • 3 dashes Angostura bitters
  • 1 sprig fresh thyme
  • 2 oz non-alcoholic spicy ginger beer
  • ½ oz fresh lemon juice
  • 1 oz soda water
  • Maple syrup (100% pure), for coating the peach

You'll Need

  • A cocktail smoker
  • Pig & Nut Premium Wood Chips (we recommend Pignut Hickory or Cherry)

Optional Garnish

  • Grilled peach slices
  • Sprig of fresh thyme

Directions

  1. Fire up your grill and set it to high heat. Grilling the peaches adds a beautiful char and softens the fruit so it breaks down in the shaker. No grill? Set your oven to broil.
  2. While the grill heats, wash and halve the peach, removing the pit. Coat the cut sides with a thin layer of 100% pure maple syrup and set aside.
  3. Place the peach halves on a clean, hot, freshly oiled grill. Cook for about 5 minutes, until a light char appears.
  4. Remove the peaches and turn off the grill. Set them aside to cool while you prep your shaker.
  5. Build the cocktail: to a shaker, add 8 ice cubes, one grilled peach half, a sprig of fresh thyme, the bitters, and the bourbon. Shake vigorously until the shaker is frosty and the peach has broken down.
  6. Add 5–6 fresh ice cubes to a cocktail glass and strain the shaker contents over the top. It takes some effort to work the peach flesh through the strainer, so keep shaking until the glass is more than half full.
  7. Top with the ginger beer, lemon juice, and soda water. Stir to combine.
  8. Garnish with a grilled peach slice and a sprig of fresh thyme (optional).
  9. Smoke the cocktail with your choice of Pig & Nut Premium Wood Chips using a wood topper or smoke chamber. Experiment with different varieties to find your favorite—you can't go wrong with classic Pignut Hickory or Cherry.
  10. Serve immediately and enjoy!
