Bacon Fat Washed Old Fashioned

For the Bacon Fat Wash

Ingredients:

  • 1–1.5 oz bacon fat (about 4–5 pieces of thick-cut bacon)
  • 1 fifth of your favorite bourbon or rye
  • 1 square of cheesecloth, a coffee filter, or wet paper towels
  • 1 large mason jar, food storage container, or empty fifth bottle
  • A fine-mesh strainer

Directions:

  1. Prep the bacon fat washed bourbon 24 hours before you plan to enjoy your cocktail. Cook 4–5 pieces of bacon over medium-low heat.
  2. Set the bacon aside and strain the bacon fat into a measuring cup. Let it cool slightly—enough that it isn't splattering, but still liquid.
  3. Combine 1 fifth of bourbon with 1–1.5 oz bacon fat in a jar. Add the lid, shake, and set aside at room temperature for 24 hours.
  4. After 24 hours, place the jar in the freezer for 30 minutes.
  5. Remove the jar, lift off the solidified top layer of bacon fat, and strain the bourbon through the fine-mesh strainer lined with cheesecloth. Your bacon fat washed bourbon is now ready to use.

For the Pig & Nut Old Fashioned

Ingredients:

  • 2 oz bacon fat washed bourbon (from above)
  • 3 dashes aromatic bitters
  • 3 dashes orange bitters
  • ½ oz maple or brown sugar simple syrup

Directions:

  1. Add all ingredients to a mixing glass with ice and stir for 20–30 seconds to infuse the flavors.
  2. Strain into a cocktail glass over a large ice cube or sphere.
  3. Garnish with an expressed orange peel.
  4. Place the finished cocktail in a smoke chamber or box and smoke with a pinch of Pig & Nut Hickory premium smoke chips for 30 seconds. Enjoy!
